Baked Eggplant Fries

These delicious and healthy eggplant fries are so simple but elegant enough to serve for your friends.

Peel, slice and soak your eggplant fries in cold water for around ten minutes. Dry thoroughly with some kitchen paper.

Whisk up a couple of egg whites until they form stiff peaks, and gently fold in a few handfuls of breadcrumbs – Japanese panko crumbs make a good choice.

Coat each piece of eggplant in this mixture and pop them in the fryer. Remembering to leave plenty of space around each one to crisp, cook for 10-15 minutes at  400°F, and there you go – perfect eggplant fries.

Air Fryer S’mores

  • 10 Graham Crackers
  • 10  Dark Chocolate squares
  • 10  Marshmallows

In the air fryer basket, assemble your s’mores by layering chocolate and a marshmallow onto each cracker. Air fry at 350 degrees for around 30 seconds, or until the mallow has started to brown.

Air Fryer Roasted Spanish Chicken

  • Chicken pieces – quarters, breast, thighs etc
  • Olive oil
  • Salt and pepper
  • Smoked Spanish paprika
  • Ground cumin
  • Juice of one lime

Mix all the ingredients in a large bowl and coat each chicken piece. Fry for 25 minutes at 425 degrees and serve with eggplant fries and salad – absolutely delicious!
